The concept of “food” has been constantly evolving and the definition is unlike the past. Freedom of choice and personal preferences change the concept of food today. Consumer tends to support what they have created and food customization has turn into a common language and trend. Environmental sustainability has always been one of the main concerns for the masses and waste management became an important factor in the food industries. Food waste can be classified under two categories, spoilage & wastage. These two further complicate the problems the world is currently facing.
Plastic packaging is often used because of its low price. However, plastic contains chemicals that may contaminate the food. As consumers, we are never aware of the quality of plastic used. This concept is based on the idea of food storage and flavor customization with the use of Chitosan, a derivative of chitin through the deacetylation process. It is a biopolymer produced from residues of crustacean shells and it is bio-compatible, biodegradable, edible and antimicrobial.
Furthermore, the coating prevents the growth of micro-organisms and prolong the storage life compared to plastic films. As a natural material, it is environmentally friendly which is safe for consumer and is not the cause for the waste problem. It demonstrates the idea of how Chitosan solution can be misted with the use of nano-technology. And how customizing food flavorings can be incorporated within.
A concept which utilizes the idea of organic lm coating on food which replaces the use of synthetic packaging. Synthetic packaging have many disadvantages and one of the main concerns focus on the waste disposal. This idea incorporated the use of Chitosan together with the nano- mist technology. The re-fillable solution within, will be misted for coating any desired food for extended storage life or flavour enhancement.
